Pumpkin carving yields a reward beyond the finished face. We enjoy the toasted pumpkin seeds. They are packed with nutrition (protein, unsaturated fats, and minerals magnesium and zinc) and easy to make. Rinse the seeds well and place them on a cookie sheet coated with vegetable oil spray. Season lightly with Kosher salt. Cook in a preheated oven at 350 degrees. After 15 minutes, check the seeds and cook an additional 3-5 minutes, if needed.
