Time for Chili

Cooler weather means it must be time for chili!  Chili packs lots of nutrients when made with beans, veggies, and lean ground beef.  Everyone has their favorite recipe.  Here’s mine:

1-1/2 pounds lean ground beef (at least 90% lean)

2 minced garlic cloves

1 each diced: medium onion and green pepper

3 Tablespoons chili powder

1 can diced tomatoes

1 can tomato sauce

2 teaspoons Worcestershire sauce

½ teaspoon salt

1 can kidney beans (drained and rinsed)

Cook ground beef until light brown.  Drain.  Return to medium heat and add garlic, onion, and green pepper.  Cook and stir to start softening veggies, 2-3 minutes.  Add chili powder and cook and stir a few minutes more.  Add canned tomatoes (undrained), sauce, Worcestershire and salt.  Simmer uncovered for 30-40 minutes.    

We eat ours on top of elbow noodles.  We’ll sprinke it with some shredded sharp cheddar cheese.  Just right for a chilly night!
