Souper Easy!

I will frequently share soup and slow-cooker recipes during the colder months.  Here’s a recipe that is both:  a chicken & noodle soup made in a slow cooker.  This one originally came from my sister Debbie.

You’ll need:  1 pound of chicken breasts (I use boneless, skinless), 1 to 2 cups baby carrots, 2 stalks celery, 1 medium onion (quartered), 1 quart chicken broth.  Place in a slow cooker with 1-1/2 teaspoons of basil, ½ teaspoon salt, ¼ teaspoon pepper.  Cook 6-8 hours on low.  Serve with egg noodles- either whole wheat or half & half as described in https://myplate2yours.wordpress.com/2011/10/27/easing-into-whole-grains/.

This will take less than 10 minutes to prepare and be well worth the effort for a dinner that everyone will enjoy!
