Touchdown Pizza

Let’s wow those Super Bowl fans with something new (& healthy) during the big game.  Carmelized onions are the base for the rest of this veggie pizza.  Feel free to try any vegetable combination you prefer.  The prep for this pizza can be done ahead of time and it only takes 10 minutes in a 450 degree oven.  

1 Boboli whole wheat pizza crust

1 large sweet onion

2 tablespoons olive oil

2 tablespoons sugar

1 tablespoon balsamic vinegar

1 cup sliced mushrooms

1 roasted red pepper, sliced into strips (about half of a 16-ounce jar)

1-1/2 cups fresh baby spinach

4 ounces fresh mozzarella cheese

Heat oil in a large skillet over medium-high heat.  Cook onions for about 10 minutes until they soften and begin to brown.  Stir in sugar and balsamic.  Add mushrooms and cook for about 5 minutes until mushrooms begin to brown and mixture thickens.   (This is the work that can be done ahead of time.  It can be placed in a container and into the fridge until game time).

To prepare the pizza:

Place pizza crust on a stone or baking sheet.  Top first with the onion-mushroom mixture, spreading it to the edge of the crust.  Next, top with slices of red pepper and add the spinach on top.  Finally, cut 1-inch chunks of cheese and scatter on top of pizza.  Bake for 10 minutes until spinach cooks down and cheese melts. 

Slice and enjoy!  TOUCHDOWN!!
