Color it Orange: Roasted Sweet Potatoes

Sweet potatoes are a great way to color to your diet.  One medium potato has 4 grams of fiber, almost 40% of your daily value for vitamin C and over 400% for vitamin A.  My family enjoys this potato simply roasted, here’s how:

3 large sweet potatoes, peeled and cut into 1-1/2 inch cubes

2 tablespoons olive oil

1 teaspoon minced garlic

1 teaspoon rosemary

1 teaspoon salt

Pre-heat oven to 450 degrees.  Place potatoes on a large baking sheet.  Mix olive oil, garlic, rosemary, and salt in a glass measuring cup.  Drizzle over potatoes, mix to coat.  Roast high in oven for 20 minutes.  Stir after 10 minutes.  That’s it!  Enjoy!
