Many families are not cooking at home this week of Spring Break. But for those of us who are, I am re-blogging a few favorites to try.
This is the recipe to pick when you need big flavor fast! The prep time is no more than 15 minutes and it simmers for 30 minutes. If you start steaming or cooking your rice at the beginning of prep time, the meal will be complete all at the same time.
Saucy Pepper Steak:
1 tablespoon olive oil
1-1/2 pound boneless skirt, round or flank steak, cut into strips
1 green or red bell pepper, cut into strips
1 sliced onion
1 bottle chili sauce (12 ounces)
6 ounces water
1 tablespoon Worcestershire sauce
¼ teaspoon coarsely ground pepper
Heat oil in a large skillet over medium-high heat. Add meat strips seasoned with pepper. Cook while stirring until browned, 5 minutes. Add pepper and onions and cook for about 3 minutes until veggies start to soften and brown. Add chili sauce, Worcestershire, and water (equal to ½ bottle of chili sauce). Simmer 30 minutes. Serve over steamed rice.
