Agave Nectar

What is agave nectar?  Is this the question you asked when you saw this sweetener used in the recipe for Cottage Cheese Pancakes?  Agave nectar (or syrup) is a sweetener produced from the agave plant.  Because it is sweeter than honey, less of it can be used in a recipe.   Agave nectar is also 25% sweeter than table sugar.  I like it for its caramel taste and have drizzled it on plain Greek yogurt for breakfast or even on top of the pancakes instead of maple syrup.

Agave nectar is most commonly found in one of three varieties:  light, amber, or dark.  The amber nectar, shown above, has a caramel flavor.  Light agave nectar has a mild, nuetral flavor.  In contrast, the dark nectar has the richest caramel flavor.

Agave nectar can be found in the natural/organic sections of large grocery chains or specialty stores.  If you try it, please let me know how you like it!
