Ham Salad Fresh!

We had leftover ham from a family party.  What to do since it’s not hot soup season?  In typical fashion, I opened my fridge and put together a quick dinner.  Save this recipe for when you have leftover ham or get some thick slices from the deli counter in your grocery store.

Ham Salad Fresh!  (serves 6)

3/4 pound elbow noodle pasta, cooked

2-1/2 cups cooked ham, diced

1-1/2 cups cherry tomatoes, halved

15.5 ounce can navy beans, drained and rinsed

1/2 cup diced red onion

1/3 cup poppyseed dressing (we prefer Marie’s brand)

1/3 cup plain non-fat Greek yogurt

fresh chives for garnish

6 Romain lettuce leaves

In a large bowl, combine pasta, ham, tomatoes, beans, and onions.  In a separate bowl, mix together the dressing and yogurt.  Pour dressing over salad ingredients.  Place lettuce leaves on individual salad plates.  Scoop a cup of salad onto Romaine leaf.  Garnish with fresh chives.  Enjoy!

  1. Looks tempting, it’s smart and certainly it’s delicious too (depending on the Ham you use).
    Yet – I’d still add some cheese – either shredded Cheddar, or just grated Parmesan, and for sure also freshly ground black pepper.
    Of course – it’s all to the personal taste. 😉
