July starts with a bang and some beets!

We are without power after a storm raged through the area around noon on Sunday.  Not much cooking going on here but I’m sending you a picture of these beautiful roasted beets. They were purchased at a weekend Farmers Market and roasted wrapped in foil at 400 degrees for 45 minutes. The only prep was to wash/scrub them and to trim the ends before cooking.

They really aren’t so pretty before they’re cooked and peeled. But they peel very easily after roasting (I used my hands  and wore a pair of disposable gloves because I didn’t want pink hands).  Later this week, I will post the recipe for a simply delicious arugula and roasted beet salad.  Stay tuned!
