Are you looking for something special for dinner tonight that everyone will like but don’t have a lot of time to fuss (of course, you’d certainly fuss if you could!). Well, I’ve got a great dinner for you!
The menu is: Marinated Pork Tenderloin, Baked Potato, Steamed Green Beans with Slivered Almonds and Mixed Green Salad.
Here is your grocery list:
Fresh (or frozen) green beans
Slivered almonds (I like the Salad Accents Honey Almonds)
Bag of mixed green salad
Dessert of your choice (optional)
Here are the ingredients you probably have ‘on hand’ (and if not, just add them to your grocery list):
Toppings for baked potato (like plain, non-fat Greek yogurt…excellent substitute for sour cream, sliced scallions, shredded cheddar cheese)
Mix together marinade: ¼ c olive oil, ¼ c soy sauce, 1 clove minced garlic, 2 T of honey and 2 T Dijon mustard
Marinate the pork tenderloin (in the fridge) for 30-60 minutes. When almost ready to cook, preheat oven to 350 degrees. Prepare the potatoes for baking (wash and make a few pokes with a fork). Place the pork in a shallow baking dish prepared with cooking spray and pour extra marinade on top. Place potatoes and pork in oven for 1 hour (until pork has an internal temperature of 160 degrees). When done, take the meat and potatoes out of the oven. Cover both with foil. Steam the green beans and toss the salad. Add the almonds to the beans before serving. Enjoy!
