Vegan ValentinesHere’s a vegan version of Easy Valentine’s Dinner

The menu is:  Roasted Honey Dijon Marinated Tofu, Baked Potato, Steamed Green Beans with Slivered Almonds and Mixed Green Salad.

Here is your grocery list:

Extra firm tofu

Fresh (or frozen) green beans

Slivered almonds (I like the Salad Accents Honey Almonds)

Baking potatoes

Bag of mixed green salad

Dessert of your choice (optional)

Here are the ingredients you probably have ‘on hand’ (and if not, just add them to your grocery list):

Olive oil

Soy sauce

Minced garlic

Honey

Dijon mustard

Salad dressing

Toppings for baked potato

The recipe:

Preheat oven to 350 degrees.  Prepare the potatoes for baking (wash and make a few pokes with a fork). Place potatoes on center oven rack (leaving room in center of rack for tofu’s baking dish).  Allow 1 hour to bake.

In the meantime, drain tofu and slice lengthwise into 8 slices.  Mix together marinade:  ¼ c olive oil, ¼ c soy sauce, 1 clove minced garlic, 2 T of honey and 2 T Dijon mustard

Place tofu slices in bowl and coat with mixture.  Arrange tofu on a baking dish prepared with cooking spray. When there are 30 minutes remaining for the potatoes, put tofu in oven on center rack and bake for 30 minutes.  This is a great time to steam the green beans and toss the salad.  Add the almonds to the beans before serving.  Enjoy!
