A little sweet and a little spicy, Baked Sweet Potato Fries are a deliciously easy side dish. Rich in vitamin A and fiber, these homemade fries are also a nutritional hit! They pair very well with my Mini Turkey Burgers. In fact, they may look familiar because they were pictured with those burgers in last month’s post. I do hope your family enjoys them like mine!
This recipe gets added to the other orange foods I’ve written about in the past few weeks: Baked Pumpkin Pudding, and Warm Sweet Potato, Lentil, and Apple Salad. Next up: Pear-Pumpkin Soup. Stay tuned!
Baked Sweet Potato Fries (serves 6)
3 sweet potatoes, peeled and sliced into 1/4 inch strips
2 tablespoons corn starch
1-1/2 tablespoons (1 tablespoon plus 1-1/2 teaspoons) olve oil
1 teaspoon each: salt, cinnamon
1/8 to 1/4 teaspoon cayenne pepper
freshly ground pepper
Preheat oven to 400 degrees. Place potatoes in a large bowl. Sprinkle with cornstarch and toss to coat. Drizzle olive oil over potatoes. Toss. Mix spices together and sprinkle over potatoes. Toss until evenly distributed. Spread potatoes onto two baking sheets.
Place potatoes in oven. After 8 minute, remove from oven and turn potatoes. Return potatoes to oven for 8-10 minutes more. Turn off oven and let potatoes sit until ready to serve (up to 30 minutes). Enjoy!
