It’s Martin Luther King’s birthday today (and my niece Olivia’s 18th). Happy Birthday! And this coming Monday, many of us will be off work and school for Martin Luther King Day. Will you have some extra time to bake? These yummy muffins freeze well so I often double the recipe. Enjoy!

Apple-Oatmeal Muffins (makes 12 muffins)
2 cups gluten-free quick cooking oats
¾ cup brown rice flour (if you don’t need to make these gluten free, use all-purpose flour instead)
½ cup firmly packed brown sugar
2 teaspoons baking powder
½ teaspoons cinnamon
½ teaspoon salt
2/3 cup skim milk
¼ cup canola oil
2/3 cup diced apples
1/3 cup golden raisins
Heat oven to 350 degrees. Fill muffin tins with 12 paper liners. Combine dry ingredients in a mixing bowl. Add combined milk, oil and egg; mixing until moistened. Gently stir in apples and raisins. Fill muffin tins with batter (2/3 full). Bake 25 minutes or until golden brown.
